ALMOST COOKING-PART THREE

 

The third (and final) installment of recipes with four ingredients or less. Note that the last two have more ingredients but are worth it.

SAUSAGE BAGELS

(This is a recipe from Irma, my co-worker for many years and friend forever. She always prepared in advance and on the morning of a staff celebration would pull from the freezer and bake.)

Ingredients:

6 bagels

1 pound sausage

1 cup cheese


Cut bagels in half. Cut a trough in each bagel.

Mix bread from trough, uncooked sausage and cheese. Stuff mixture in trough.

Freeze.

When ready, preheat oven to 350 and bake until sausage is cooked.

 

BREAKFAST SAUSAGE RING

Ingredients:

1 roll of bulk Jimmy Dean sausage (any flavor)
2 7.5 oz cans of Pillsbury Buttermilk Biscuits
2 cups shredded Cheddar or Monterey Jack cheese

Preheat oven to 350.

Brown sausage in frying pan, drain. 

Open one can of biscuits and flatten each biscuit into larger circle. Place in bottom of greased Bundt cake pan, overlapping each biscuit so that it makes a ring around bottom of pan.

Top biscuits with 1 cup of shredded cheese. Place cooked sausage on top of cheese then top sausage with remaining 1 cup cheese.

Open second can of biscuit dough and flatten out each biscuit, repeat placing dough around the top of Bundt pan so it looks like a ring.

Cook for 25 min or until golden brown.

Let sit in pan for 5-10 min before inverting onto a plate. Slice and serve.

Note: If you like spicy, choose Jimmy Dean spicy hot sausage and use Pepper Jack Cheese!

 

SALMON PATTIES

(This is not for my gourmet readers – just one that my family loves!)

Ingredients:

One can of salmon (not drained)

One egg

Corn meal as needed

Salt and pepper to taste

 

Mix ingredients adding corn meal until the consistency allows for forming patties (or bite sized balls).

Fry in oil. Remove and place on paper towel to drain excess oil.

Put out a bottle of catsup and serve.

 

CHICKEN AND DUMPLINGS

(Jennifer insisted I add this one. It does not compete with hand-rolled dumplings but is much easier.)

Ingredients:

Chicken

Cream of chicken soup

Chicken broth

Canned biscuits

 

Boil chicken in water and chicken broth.

Remove chicken and shred.

Add cream of chicken soup for a creamier broth. Bring to a boil.

Tear biscuits into quarters and toss into boiling broth. Stir regularly to keep dumplings from sticking. Cook about 15-20 minutes.

Add chicken.

 

TACO SOUP

(This is a 7-ingredient recipe. I only add it because I can easily remember these 7 ingredients and never need to check the recipe.)

Ingredients:

1 pound cooked and drained ground beef (add onions and peppers if desired)

2 cans whole kernel corn (not drained)

2 cans Veg-All (mixed vegetables) (not drained)

1 can Rotel tomatoes (not drained)

1 package taco seasoning

 

Mix and let simmer.


TACO SALAD 

(Another taco-based 7 ingredient recipe because I like it.)

Ingredients:

1 pound cooked and drained ground beef

Lettuce

Tomato

One can drained and rinsed Ranch Style beans

Cheese

Nacho tortilla chips

Catalina Salad Dressing
